Angel Hair Pasta With Chicken

 

4 tablespoons olive oil, divided
2 skinless, boneless chicken breast halves, cut into 1" cubes (can substitute ham)
1 carrot, sliced diagonally and thinly
1 10 to 12 oz package frozen broccoli florets, thawed (can substitute peas)
1 small onion diced
2 cloves garlic, minced
1/2 teaspoon lemon pepper
12 oz angel hair pasta
2/3 cup chicken broth
1/2 teaspoon oregano
1/4 cup grated parmesan cheese

 

 

Heat 2 tablespoons of oil in a large skillet over medium heat; add chicken.
Cook, stirring until chicken is cooked through, about 6 minutes.
Remove from skillet and set aside.

Cook pasta according to package directions.

Heat remaining oil in the same skillet.
Add carrot and onion; cook stirring for 4 minutes.
Add broccoli and garlic to skillet; cook for 2 minutes longer.
Sprinkle vegetables with lemon pepper and oregano.
Add chicken broth and parmesan cheese to skillet.
Stir to combine.
Return chicken to skillet.
Reduce heat and simmer for 4 minutes.

Drain pasta and mix with chicken and vegetables.
Serve hot.
