Baked Omelet Casserole
4 pieces of bread, diced into 1” to 1 1/2" cubes
8 large eggs
1 cup of milk
2 ½ cups of diced assorted omelet type fixings, anything you
have handy in the fridge
such as
Mushrooms
Onions
Pepper
Cheese
Deli meats
Left over ham, bacon or sausage
salt and pepper
Preheat oven to 350 degrees.
Grease a 9x12 casserole dish.
Place bread cubes in the casserole dish.
Beat milk into eggs, toss in omelet fixings, salt, and pepper.
Pour egg mixture over bread cubes.
Mix all ingredients together.
Bake 30 minutes or until top is golden brown.
Serve with shredded cheese and picante sauce on top if you like.
Great for dinner too!
