CHEESY HAMBURGER BEAN SOUP
(RAVENWOOD SOUP)
2 pounds lean ground beef
1 onion, chopped
2 cans whole kernel corn, undrained
2 cans red kidney beans, undrained
2 cans diced tomatoes, undrained
2 cans Rotel tomatoes
2 pounds Velveeta cheese
Brown hamburger with onion and drained thoroughly.
In large soup pot mix together hamburger, onion, corn, beans, tomatoes
and Rotel.
Simmer 30 minutes or longer.
Just before serving, dice Velveeta and add to soup.
Stir until cheese is melted.
Garnish individual servings with a dollop of sour cream and chopped
parsley, if desired.
You can substitute mild Rotel tomatoes if you like a
milder flavor.
Serves 12 to18.
