CHICKEN FAJITA NACHOS

 

2 1/2 cups shredded cooked chicken
1 package (1.27 oz) fajita seasoning mix
1/3 cup water

about 8 oz tortilla chips
2 1/4 cups shredded cheeses (mix cheddar and monterey jack)
1 large tomato, chopped
1 can (2.25 oz) sliced black olives, drained
1/4 cup thinly sliced green onions, including tops

salsa, guacamole, sour cream, jalapenos, shredded lettuce, additional shredded cheeses
or whatever you like for optional garnishes and added flavors.

 

In medium skillet mix chicken, seasoning mix, and 1/3 cup of water.
Bring to boil; reduce heat to low and cook 7 minutes.

Arrange chips on baking sheet or large shallow oven proof platter.
Top with chicken and cheeses.
Place under broiler to melt cheese.

Top with tomato, olives, and green onions.
Return to broiler for 2 minutes.

 

Top with desired garnishes and serve hot.

 

Also good with cooked ground beef instead of chicken.
