Creamy Corn with Bacon

 

2 tablespoons olive oil
1/4 cup finely chopped onion
1 tablespoon finely chopped green bell pepper
3 slices bacon, cooked crisp and crumbled
1 tablespoon flour
4 cups frozen corn
1 small jar chopped pimentos
2 to 3 oz cream cheese cut into small cubes
1/4 cup heavy cream
2 tablespoons milk
1/4 teaspoon garlic powder
dash ground red pepper
salt and pepper to taste

 

Saute onions and peppers in oil until tender crisp, add bacon, sprinkle with flour.

Add corn and pimentos, mix well.

Add cream cheese, cream, and milk, mix well.

Heat till cheese is melted and corn is hot. 6 to 8 minutes.

Add sesonings, mix well, serve hot.
