Darryl’s Overnight Breakfast Sausage Casserole

 

1 package (12 oz) bulk breakfast sausage – cooked, drained, crumbled
4 cups cubed bread – stale leftover bread or rolls of just about any kind
2 cups shredded sharp cheddar cheese
2 (12 oz) cans evaporated milk
10 eggs – beaten
1 teaspoon dry mustard
¼ teaspoon onion powder
black pepper

Grease a 9x13 baking pan.

Place bread cubes in the pan and sprinkle with cheese.

Combine – evaporated milk, eggs, dry mustard, onion powder and pepper in a medium bowl.

Pour egg mixture evenly over bread and cheese, sprinkle with sausage.

Cover and refrigerate overnight.

In the morning:

Preheat oven to 325

Bake casserole for 55 to 60 minutes – till cheese is golden brown.

(cover with foil if top browns to quickly)


To serve cut into squares.

Great with a little salsa on top!

Made this for a Girl Scout Father Daughter Breakfast once and all the girls and Dads loved it!
There were no leftovers to bring home!
