Donna's Homemade Summer Sausage

 

2# extra lean ground beef
2 tablespoons Morton's Tender Quick
1/4 teaspoon onion powder
1 1/2 teaspoons liquid smoke
1/8 teaspoon garlic powder
1 cup water

 

Mix well.

Shape into 3 long rolls (about as long as a cookie sheet).

Wrap rolls in plastic wrap.

Refrigerate 24 hours.

Remove wrap and lay in a shallow pan.

Bake 45 min. at 300, turn halfway through cooking time.

 

Karen's note:
I usually divide the mixture in half, adding minced garlic to half and jalapeno and cheddar to the other half.
And shape into 4 smaller logs.
