Grilled Pork Tenderloin
3 to 4 pound tenderloin
20 oz can pineapple rings in juice
Marinade:
½ cup olive oil
1 ½ cup soy sauce
½ cup brown sugar
¼ cup pineapple juice from can of pineapple rings
(transfer rings to container and refrigerate until ready to grill)
¼ cup orange juice
¾ teaspoon dried rosemary
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon red pepper flakes
½ teaspoon ground ginger
Reserve ¼ cup of marinade for basting.
Trim tenderloin as needed and marinate 5 to 6 hours before grilling.
Preheat grill to medium temperature and
grill tenderloin for 45 min to 1 hour turning every 15 minutes.
Baste with reserved marinade during last 10 minutes of grilling time.
Brush pineapple rings with a small amount of olive oil and grill 2 minutes
on each side;
serve with sliced tenderloin.
