Ham & Potato Casserole

 

4 medium/small potatoes, peeled and diced
2 cups cooked ham, diced
1/4 cup butter
1/4 cup chopped onion
1/3 cup flour
1 3/4 cup milk
1 1/2 cups shredded cheddar cheese
black pepper

 

Heat oven to 350.

Cook potatoes in boiling water 10 min. Drain

Mix potatoes and ham in a large bowl and set aside.

In a sauce pan saute onion in butter for 2 min. Add flour and mix well.

Add milk a little at a time to incorporated the flour mixture.

Add black pepper to taste and shredded cheese.

Boil 2 min. to melt cheese and thicken sauce.

Pour cheese sauce over ham and potatoes and mix well.

Pour mixture into a greased 11x7 baking dish.

Cover with foil and bake 25 to 30 min.

 

This is a great way to use up leftover Christmas ham!
