Hamburger Potato Casserole
5 small to medium potatoes, raw, sliced thin In a skillet brown the ground beef and mix in both cans of soup (undiluted). Cover bottom of an 8x12 -2 quart casserole dish with the oil. Layer potatoes in the bottom of the casserole dish and sprinkle with salt, pepper, and minced onion. Pour beef mixture evenly over potatoes and cover with foil. Bake at 375 for 1 hour, or till potatoes are done. (If I have a little shredded cheese leftover from something else I’ll sprinkle it on top before I bake it.)
