Easy Jambalaya Casserole
1 large onion, chopped
1 ½ green bell peppers, chopped
½ cup butter or margarine
1 pound fully cooked Beef Polska Kielbasa, cut into slices
2 cans chicken broth with roasted garlic
2 cups uncooked long grain rice
1 can diced tomatoes with green chilies
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon pepper
In a large skillet, sauté the onions and green
peppers in butter until crisp-tender.
Stir in remaining ingredients.
(If your skillet is not large enough
transfer your peppers and onions to a large bowl to combine with the
other ingredients.)
Transfer to a greased 9”X13” baking dish.
Cover with foil and bake at 375 for 45-50 minutes or until rice is tender,
stirring twice.
Makes about 8 servings.
