Loaded Potato Casserole

 


5 cups frozen hash brown potatoes (not shredded) (it's best to thaw these a little first)
½ cup melted butter
¼ cup finely chopped onion
1 can cream of chicken soup
8 oz. sour cream
1 package ranch dressing mix
1 cup shredded cheddar cheese
salt and pepper
Optional – ¼ cup crisp crumbled bacon or bacon bits

Mix all ingredients in a 2 quart casserole dish, cover with foil and bake at 350 for 50 min.
