Meatball Stew

 

1 pound ground beef
¼ cup finely crushed saltines
½ teaspoon oregano
1 egg
¼ teaspoon onion salt
¼ teaspoon garlic powder
2 tablespoons oil
2 cans (10 ½ to 11 oz.) condensed French Onion soup plus 1 cup water
(or 4 cups of water and 1 envelope of onion soup mix)
2 cans cubed new potatoes (or 4 small potatoes peeled and cubed)
1 small can cut green beans, drained
1 small can corn, drained
1 large can tomatoes

 

In medium bowl, combine ground beef, saltine crumbs, oregano, egg, onion salt, and garlic powder.
Mix thoroughly.
Shape into 15 to 20 meatballs.

In skillet over medium heat, in hot oil, cook meatballs until browned on all sides. Pour off fat.

Stir soup and water into soup pot, stir in potatoes, green beans, corn, and tomatoes.
Carefully add meatballs.
Heat to boiling.
Reduced heat to low.
Cover and simmer 30- minutes.
