Mexican Slaw
1 tsp of fine shred of lime peel
(use your rasp or microplaner to remove the shred easily from the lime)
1/4 cup of fresh lime juice
1/4 cup of minced, fresh cilantro
1 packet of Truvia (Stevia. A sugar substitute that’s natural)
1 jalapeno chili, seeded and finely minced
4 cloves of garlic, minced. You can use fresh or jar garlic for this
one
Salt and pepper to taste
4 cups of shredded cabbage
10 cherry tomatoes cut in half
Make the dressing. Add the lime peel, lime juice, cilantro, Truvia,
jalapeno,
garlic and a grate of sea salt in a bowl. Stir.
Put the slaw and the tomatoes in your bowl. Toss with the dressing.
