HOMEMADE SUMMER SAUSAGE
2 lbs. ground beef
1/2 c. water
1/4 tsp. ground mustard
1/4 tsp. garlic powder
2 1/2 tbsp. Morton's Tender Quick
2 tsp. liquid smoke
1/4 tsp. onion powder
¼ tsp. Salt
¼ tsp. Black pepper
Mix together and roll in 2 sheets of tin foil.
Refrigerate overnight.
Next day poke holes on one side of foil and place on oven rack (with
the drip pan underneath)
bake for 1 1/2 hours at 350 degrees.
Optional; dived into 2 and make one garlic sausage log and one jalapeno
sausage log.
For garlic sausage mix in 1/2 tablespoon finely minced garlic
For jalapeno sausage add 1 or 2 tablespoon finely minced jalapenos
If dividing into 2 smaller logs reduce baking time to 1 hour.
