Susan’s Scrumptious “Almost
Sugarless” Pecan Pie
This recipe will make two 9” Pecan Pies. You will
need two unbaked 9” piecrusts.
To make one pie, use 2 Large Eggs and halve the
other ingredients. Use one 9” crust.
NOTICE* This pie is very low in sugar, but it is not
a “diet” pie.
It does have fewer calories than conventional pie, but it’s so
good, you will want to eat too much of it.
As a comparison the imitation “honey” (or Maltitol Syrup)
that I use has 50 calories per tablespoon
compared to 60 calories per tablespoon for light or dark corn syrup.
(It takes slightly less Maltitol Syrup to equal the sweetness of Corn
syrup.)
Sucrolose has 0 calories in ¼ cup compared to 193 calories in
¼ cup of granulated sugar.
Splenda® Brown Sugar Blend has about 368 calories per ½ cup,
which is equivalent to 1 cup of
conventional brown sugar (786 calories).
If you are modifying this recipe to use conventional
sugars use ¼ cup granulated sugar, 1 cup brown sugar,
and 1 ¾ cups of Corn Syrup (Light or Dark – I prefer Light.).
Ingredients:
2 ½ Cups Pecans (I think broken pieces work great,
but you can use halves if you like.)
5 Eggs, Slightly Beaten
1 ½ Cups Sugar Free Imitation Honey or Maltitol Syrup (I use
Honey Tree® brand).
¼ Cup Splenda® Sucralose Granular Sugar Substitute
½ Cup Splenda® Brown Sugar Blend
2 Tbls Rolled Oats (Use “Old-Fashioned” oats, not the instant
oatmeal type. I prefer Quaker®.)
1 Tbls Flour (You may use 3 Tblsp. of oats and no flour if you prefer.)
½ tsp Salt
2 tsp Vanilla Extract
¼ Cup Melted butter or margarine – slightly cooled
(I use butter-flavored Crisco. You want this to be liquid, but not so
hot it cooks the eggs.)
Directions:
Preheat oven to 375°.
Divide the pecans between two unbaked 9” pie shells.
Spread them evenly.
Mix the beaten eggs, Maltitol, and sugar substitutes
(white and brown) together.
Be sure the “sugar” has dissolved before adding other ingredients.
Add oats, flour, salt, vanilla extract, and butter (or
margarine).
Pour the mixture evenly over the pecan pieces in both
pie shells.
Bake at 375° for 40-50 minutes until filling is
set.
(Dark pans will take less time than bright pie pans or glass.)
