Texan Ranch Chicken Casserole

 

1 large onion chopped
1 medium bell pepper chopped
1/4 butter
1 clove garlic minced
2 1/2 to 3 cups cooked chicken cubed or shredded
1 can cream of chicken soup
1 can Rotel tomatoes with green chilies
1 package ranch dressing mix
10 flour tortillas cut into 1" strips
8 oz shredded cheese (cheddar, monetary jack or both!)

 

Saute onion and pepper in butter until tender crisp, add garlic and cook 1 minute longer.

Stir in chicken, soup, tomatoes, and ranch mix.

Line bottom of baking dish with tortilla strips, top with half of chicken mixture and half of cheese.

Repeat layers.

Bake uncovered at 350 for 30 to 40 minutes until hot and bubbly.
