Turkey MeatBall Soup

 

1 # ground turkey
1/4 cup cracker crumbs
1 egg
1 teaspoon garlic powder
1/8 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon oregano
5 1/2 cups water
1 envelope onion soup mix (4 serving size)
1 can (15 oz.) pinto beans, drained
2 can (14 or 15 oz) diced tomatoes (add some spice and make one of them rotel!)
1 can corn, drained
1 medium onion, chopped
1 1/2 cup minute rice
parsley
chili powder
salt and pepper

 

Mix turkey, crumbs, egg, garlic, pepper, paprika, and oregano.
Shape into small balls. Brown in skillet in 2 tablespoons of oil.

In a large sauce pan bring water to a boil. Stir in soup mix.
Reduce heat, cover and simmer for 5 minutes.

Add onions simmer another 5 minutes.
(you can toss your onions in the skillet after the meatballs are browned, then add them with the meatballs)

Add meatballs, beans, tomatoes, and corn. Simmer 15 minutes.

Stir in rice, cover and remove from heat.

Let stand 5 minutes, add chili powder and pepper to taste, sprinkle with parsley.

 

It's also good with a handful of chopped cabbage added in with the other veggies.
