Rice & Beef Skillet Dinner

 

1 pound ground beef

1 large onion; chopped

4 or 5 green onions; thinly sliced (including green tops)

1 clove garlic; minced

1 can kidney beans, pinto beans, or black beans; drained and rinsed

1 can whole kernel corn; drained

1 can rotel tomatoes with green chilies; liquid included

salt and pepper to taste

1 envelope onion soup mix

1 can cream of mushroom soup

2 cups of cooked rice; can use as much as 3 cups

shredded cheese for topping

 

Brown beef and onions in a large skillet till nearly done; add garlic and
continue cooking till beef is browned and no longer pink.

Add beans, corn, and rotel, salt & pepper, soup mix, and mushroom soup; mix well.

Add rice and heat through.

Serve with shredded cheese to sprinkle on top.
